I’m having a hard time getting the right amount of Guar Gum into the recipe to bind the butter (if this is the correct term). I add the 1/2 tsp+ but it doesn’t want to bind & I still have quite a bit of oil. What am I doing wrong?
I am a newbie and have been searching the internet for days trying to find the right recipe. I have the concentrate in a syringe. Can I just add that straight to butter? Also do I have to use the extra flavoring and food coloring? For example If I want straight cherry and I'm using cherry jello do I need to add more flavor and coloring? I really hope someone can help me because I have yet to get the exact help I need and don't want to ruin product
Gummies turned out great only trouble I was having is the gummies stick to the silicone molds. Anything I can use to coat them that will still allow the gummies to settle properly?

I have a problem, and would be happy if you could please help me: I mix the lecithin and oil separately and then add it to the mix on the last stage, and then I add it to the pot slowly and whisk it mildly, but the oil comes out separately after i freeze, so my question is am I not whisking hard enough or am I not adding enough lecithin or is it because I pre-mix the oil and lecithin? I would really apricate it if you could give me a tip on this.

I love that a better method was discovered for the guar gum- and it was mentioned! I used the new suggestions and they worked perfectly. I also had to add a bit extra guar. Taking the mixture off the heat when mixing seemed to make it work easier. I used the guar gum because of the (reported) taste issue with lecithin. For me, it's important to make a consistent mixture, so evaporation is a consideration while cooking. I've used a lid on and off to help with that. Also The lecithin made a more homogeneous mixture more easily, but the guar gum made a better tasting gummie- just my newbie opinion 🙂 I admire the work that has gone into helping us make our own edibles, and the quality of the content. Just one question with the alcohol spray – am I doing that immediately after taking them out of the moulds or after they have dried out and just before the sour sugar mix? I did it after drying out the first few times but now I’m wondering if that’s the best way? It wasn’t clear in the video or maybe I need more coffee and didn’t notice 😅

This recipe has been working wonderfully for me using infused coconut oil. I now have a client who cannot have fat of any kind. So if I use FECO I am missing a quarter cup of liquid (oil/butter). I did have some success mixing the FECO with lecithin and about a tablespoon of honey, then upping the water a scant quarter cup to keep the volume the same. And of course I didn't need the guargum. Anybody else tried fat free gummies? Looking for suggestions. I love this recipe and want to change it as little as possible!

How much of lorann flavoring are you using? I tried a couple of batches of gummies with soy lecithin. (I don't mind the flavor) but the first 2 I mixed the lecithin into the oil and mixed before adding it to the sugar/ Gelatin mixture and another batch I mixed into the corn syrup. (Didn't think about it) and a lot of the oil separated from the gelatin in the molds.

INGREDIENTS: – 2 3 oz boxes Jello gelatin dessert powder – 2 Tbsp unflavored gelatin – 1/2 tsp citric acid – 1/2 cup light corn syrup – 1/2 cup ice cold water/juice (for unflavored gelatin) – 1/2 cup water/juice room temp. – 1/4 cup cannabutter melted, microwave for 15 seconds (regular gummies do not use) – 1/2 tsp guar gum (regular gummies do not use) – 190 proof alcohol or everclear (optional if tacky gummies)
EQUIPMENT: – Silicone whisk – Silicone spatula – Double boiler or pot with heavy bottom – 1+ inch silicone molds (avoid smaller sizes) – Drying rack – Parchment paper
DIRECTIONS: Set up double boiler and set stove to LOW. (DO NOT INCREASE HEAT)
In a separate bowl, add 1/2 cup of cold water/juice and evenly sprinkle the unflavored gelatin on top of the liquid. Stir until there are no lumps remaining (applesauce consistency). Let stand for 5 minutes to allow the gelatin to bloom. (2 envelopes is equal to 2 Tbsp.)
Add flavored Jello powder, 1/2 cup of light corn syrup, and room temp water/juice to double boiler. Mix gently until Jello is dissolved and completely clear. This will take about 5-7 minutes. Once Jello is dissolved, turn off heat and add 1/2 tsp of citric acid. Make sure to go around the edges of the pot with spatula to remove sugars that have stuck to the sides.
Once unflavored gelatin has bloomed, add it to the flavored Jello syrup mixture.
Stir gently to combine all ingredients. Stir until completely melted.
Add cannabutter and guar gum to Jello mixture. Be sure to sprinkle guar gum evenly over mixture with fine mesh strainer, tapping gently. Let sit for a minute before emulsifying.
Use silicone whisk to emulsify. Whisk for a minute or 2. Check thoroughly for small bits of cannabutter ot oil slicks remaining unblended. If you see unblended cannabutter, whisk a bit longer. If you still see oil slicks on the surface, add additional 1/8 tsp of guar gum to the bowl you had the cannabutter in and stir to blend the remaining butter with the guar gum. once blended, add it to Jello mixture and whisk again.
Premix 1 cup of Hoosier Hill Farm Clear instant Jel with 1/4 cup of sugar. Add 2 Tbsp. of Jel/sugar mix into Jello mixture and whisk to blend.
Mix gently until you get a slightly thicker consistency. let sit for a bit until any air bubbles rise to the surface. Use small fine mesh strainer and gently remove air bubbles.
TIP: Place molds in freezer before applying Jello mixture. Remove cold molds from freezer when ready to pour Jello mix. Turn squeeze bottles upside down with finger over tip and tap to allow any air bubble to rise to the top (away from applicator tip).
If using silicone molds, there is no need for cooking spray. If not, very lightly spray the molds and remove any excess spray from the top of the molds and inside the cavities.
Place Jello mixture into squeeze bottle or dropper. If gelatin starts getting too thick, place bottle in warm water bath after filling with gelatin mix.
Fill each mold almost to the top, but not completely full.
Place in refridgerator for 20-30 minutes or until set.
When the candy is firm, push each piece out of the molds and arrange them on a baking sheet or in large storage container over parchment paper so that they are each standing upright. Punch holes in parchment paper with a fork to allow air to get to the gummies from all angles. Let them sit this way for 48 hours, then lay them on their backs for an additional 24 hours. This process will help the bears dehydrate so that they are chewy like the originals.
If gummies come out too soft or squishy, add another 1/2 Tbsp of unflavored gelatin after melting gummies back down on low in double boiler.
If candies are too tacky, lightly spray coat the gummies with 190 proof alcohol or everclear

Ingredients:
1 Jello box (3oz or 85g)
1 tbs/cs unflavored gelatin or agar agar
60ml or 1/4 cup water half frozen to mix with gelatin, half normal in the pot)
15ml or 1/16 cup corn syrup
15ml or 1/16 cannabutter
1/4 ts guar gum
1/8 ts citric acid (one ts/cc = 5g) if you don't have it you can use lemon juice: (4.5 ts juice for 1 ts of acid) = half ts of lemon juice
moulds
bottles/syringes/drops for pouring the mixture into the mould
silicone/wooden whip (no metal whip)
optional: few drops of articial flavour/color
optional: spray bottle and 94° alcohol or everclear (to spray on the gummies to help create a barrier on the gummies to keep them chewier for longer and prevents them from sticking together)
Instructions:
– Put 1/8 cup or 30ml of water in the fridge so it's very cold. Put your moulds in the freezer before starting.
– Sprinkle the gelatin over the very cold water (1/8 cup or 30ml), stir it into the water, make sure there's no lumps and let it bloom by putting it back in the fridge (should be applesauce-like texture)
– Put the jello, the syrup and other half of water (1/8 cup or 30ml) in a pot on low heat. If you start to see any white streaking take it off the heat. Stir until the sugar and everything is dissolved (5-10 min)
– Turn off heat, put the citric acid and the gelatin in. Stir until gelatin is melted and everything has a uniform texture.
– Add the melted cannabutter and the guar gum (you can use a strainer to evenly distribute the guar gum onto the butter so it doesn't clump. Let it sit for a minute
– Whisk (don't use a metal whisk ever) until you don't see any oil slicks, if you still see oil slicks after a whisking again, try adding a little more guar gum (1/16 ts) that you have mixed with the little remains of cannabutter in its bowl.
– Now you can add the flavoring and food coloring you want, (don't use too much coloring, only ~2 drops no more)
– If you want to make sure the candy will set, put a little bit of the mixture in a bowl in the fridge and see if it sets after about 5 minutes, if it still sticks to your finger try adding about 1/4 tbs of gelatin with 1.5 tbs of cold water.
– Let it rest for a couple minutes to let the air bubbles come up, you can try and scoop the white layer on top with the strainer.
– Then pour your mixture into the bottles/syringes, fill up your moulds (not all the way to the top just below it)
– Once your gummies have set, get them out of their mould and put them on parchment paper, rest for about 12h on each side.
– Optional: Spray the gummies with your alcohol or everclear and mix them a bit so it applies on every gummy.
– Optional: To coat them in sugar or sour sugar, hold the gummies over some steam to make them a bit gooey, then dump them into sugar and citric acid (a cup of sugar to a quarter ts of citric acid or 1 ts of lemon juice).

So instead of food color and the flavor oil stuff I used Mio Sport flavoring. It works great. I just use like a good 2 second squirt.
I'm just curious what happened to the sugar melting /cooking part .mine taste alittle off. If I want them sweeter can I still do that?
