Cannabutter:
½ c water
5 tbsp butter
Decarb weed at 240F for 35 mins. Melt butter with water in a saucepan until temperature is ~190F. Add decarbed weed. Cook 2½ – 3 hours, keeping temperature between 185-200F. Strain out weed.
Thin Mints:
5 tbsp butter
½ c sugar
1 egg yolk
1 tsp vanilla
¼ tsp peppermint extract
¼ + 2 tbsp cocoa powder
½ tsp baking powder
¼ tsp salt
1 c + 2 tbsp flour
1 ½ c semisweet chocolate chips
1 tbsp coconut oil
¼ tsp peppermint extract
1. Cream butter and sugar together until light and fluffy. Add in egg yolk, vanilla, and peppermint extract until incorporated.
2. Whisk in cocoa powder, baking powder, and salt.
3. Add in flour and work into dough until combined.
4. Form a ball with the dough, then transfer to parchment paper. Roll out between two sheets of parchment paper until about ⅛ in thick. Refrigerate dough only on first round of rolling out.
5. Cut out 1.5 inch, circular cookies until all dough is used. Regroup dough and roll out between cuts, but you do not need to refrigerate every time.
6. Bake cookies at 350F for 10-12 mins.
7. Melt together chocolate chips, coconut oil, and peppermint extract in a double boiler until smooth.
8. Coat each cookie in chocolate, tapping off any excess chocolate so that there is only a thin layer on each cookie.
9. Leave dipped cookies out until chocolate has hardened.
Thank you so very much for this recipe. I'm 64 and I weaned off of a Dilaudid pain pump for spinal pain. These lil gems, 1/2 of one, does the trick. Then around 6 PM, I eat the other half. Sleep has never been so wonderful. Pain used to wake me 2-3 times a night. I am my husband's caregiver so I need to wait until early afternoon to medicate. ❤😃❤
I made these but used butter and infused sugar melted Andres mints instead of chocolate chips because I had them did not want to go to store! I will be making often lol
Could u infuse the coconut oil prior to adding it to the chocolate dip? I know you can,but I’m curious to know how much I could infuse in that tablespoon.. don’t wanna out too much to where it can’t absorb. Ty so much for these vids
