To get straight walls there are rendering metal rods. Attache with same material day before. Make it directly level over the entire wall. Pre moist the wall. Afterward moist can be soaked up and even hardens the lime.

I went with insulated lime render – basically a lime render with small glass beads added to it, – supposedly improves the U value of a solid wall by up to 40% (at 5CM) was lovely to put on the walls and so far so good!
Hi in Montenegro which has similar conditions to you guys. Lime putty is used a lot people over the years have used all sorts of things added to the mix. Having learned the ways to plaster in the uk I found the local way odd but it works very well. They make the mixture a little wetter and throw it on to the wall after which troweling or smoothing.
Great to see yor drainage systems working and what a terrific finnish the hemp makes,i used to hang hemp rope for hanging off chimneys,steeples ect on bosons chairs and if you leave hemp rope wet it quickly forms damp smells and rots so best to dry quick and not use to much water, looking great .
You might try smoothing the plaster off with a sheet of polyethylene and maybe a paint roller whilst it is still soft ?

In cob is used 70% sand, 30% cob and 5-10% stroh or hemp. For rendering also with lime. But had the same mix as cob. 70% sand, 30% lime and 10% hemp?

Does the hemp plaster leave any powdery residue?
